Vijai Lal is a self confessed 'foodie' born in Southland, New Zealand. He graduated from Otago University in 1995 with a degree in Food Science and attained a Post graduate Diploma in Viticulture and Oenology from Lincoln University the following year. He possesses a unique and interesting cultural heritage, his Father is of Indian descent born in Fiji, and his Mother is of Danish ancestry. Vijai has a charismatic personality and a love affair with spice and anything exotic and aromatic. He is able to masterfully blend herbs and spices from all around the world, to create unique flavours and experiences. Traditional Family recipes originating from India, evolved and adapted in Fiji and now further drawing on the culinary traditions of Aotearoa are carefully guarded and protected secrets.
