Southland Lamb Shanks with Indofusion Tamarind Chatni and Dates (Serves 6-8)
Ingredients:
6-8 Lamb Shanks: One lamb shank per person (or 2 if you're a bloke)
Half bottle of red wine (this is for cooking! The other half for you)
Orange zest
2 tablespoons of Indofusion tamarind chatni (sweet or exotic)
250 grams pitted dates
250ml beef stock
A bayleaf or 2
Garlic whole cloves (go on be generous)
Pinch of bitter cocoa (not essential but helps to thicken recipe and add colour)

Method:
Brown lamb shanks in a frying pan
Transfer sealed shanks into baking dish
Add red wine, Indofusion tamarind chatni, bayleaf, garlic and beef stock
Cover and cook at 165-170° for approx 1 & 1/2 hours until meat is tender and starting to fall off the bone
Add dates to thicken and cook for a further 30 minutes
Serve with cous cous or mash potatoes

Herbal Bruschetta (or pizza base) topped with Indofusion Sweet Mango Chatni
Ingredients:
1/2 loaf sourdough or French bread
Minced garlic mixed with paprika
Virgin Olive oil
2 tablespoons Fresh minced fresh basil
1/2 cup grated parmesan cheese
Indofusion Sweet Mango Chatni

Method:
Slice French bread into 1/2 inch slices
Sprinkle with garlic, basil, olive oil and parmesan cheese and bake in preheated oven at 200° for 3-4 minutes
Drizzle Indofusion sweet mango chatni over the bruschetta before serving

Southern Man Marinade – BBQ style
Ingredients (for 1kg beef steak):
3 teaspoons Indofusion Tamarind Chatni
1/4 cup beer (whatever you are drinking)
Olive oil
Salt and pepper

Mix all ingredients together in a bowl, smear over meat and leave to marinate for at least 30 minutes (the longer the better!)
Cook the meat on the BBQ just the way you like it!
Indofusion Ham Glaze
Ingredients:
1 cup apple cider
1/2 cup apple syrup
1/2 cup brown sugar
Half a jar Indofusion Tamarind Chatni

Method:
Preheat oven to 180°
Prepare ham (remove rind and score the fat with a very sharp knife making diagonal cuts creating a diamond effect)
Mix Indofusion tamarind chatni with apple syrup to create a paste and set aside
Place ham with scored side up into a large baking dish and pour over the apple cider
Bake for 40 minutes, basting half way through with the apple cider in the bottom of the pan
Remove from the oven and brush the Indofusion chatni paste over the ham to glaze
Return to oven and bake for a further 30 minutes, basting again half way through
Eat hot or cold (hot is my favourite!)
