Spicy, simple and delicious. This curry is a family staple.

Trim meat, remove all bones and slice into 1 cm strips (against the grain). Heat oil in large saucepan, add onion and cook till lightly browned. Add garlic stir fry for 1 minute. Next add curry powder, mix well and cook for a further minute. Stir chicken through, cook until meat is well seared (5min), and continue to cook on moderate heat for 15 -20 mins or until tender.
Mix through 3 tablespoons Indofusion tamarind or mango chatni, fresh coriander and salt to taste.
Serve with steamed basmati rice and roti
NB>For a saucier curry- after searing meat add 1 can of chopped tomatoes or 1/2 cup light coconut cream or coconut milk
